TimHeala epitomizes the “vocationer.” Growing up in the Pacific Northwest,Tim thought he wanted to be a journalist. So, off to journalism schoolhe went. After graduation, he moved to New York and worked his way upin "Corporate America," becoming an editor at a trade publication.Then, suddenly it hit him. He had gotten what he thought he wanted inlife – but he wasn’t satisfied or fulfilled.

Tim always loved tocook and bake. While still working in New York, he began takingculinary classes. He found his passion: baking bread. He enrolled inPeter Kump’s New York Cooking School, and the rest is bread-bakinghistory.

Through the mentorship and guidance of baker, NickMalgieri, Tim embarked on the opportunity of interning at Pearl Bakeryin Portland, Oregon, in 1998. Within a year, he was promoted to headbaker. In 2002, Tim’s team won a silver medal at Paris’s prestigiousCoupe du Monde de la Boulangerie competition. In 2004, Tim was namedone of Food & Wine Magazine’s thirty-five Tastemaker Awardrecipients.

Tim has now moved into a consulting role at PearlBakery and is involved in employee training, quality control, andproduct development. He works closely with Eric Lester, owner of PearlBakery, and the staff to insure their customers enjoy breads andpastries made with the finest ingredients. “I love to be part ofkeeping European baking styles alive by using the best, basicingredients combined with modern technology,” Tim says.

Heremains passionate about his second career and his commitment to finebaking. Since his roots in the baking profession are in bread making,we asked Tim just what kind of bread would he be if he were a bread?“Panettone,” replies Tim. Why? “Because it is unique, complex, sweet,made up of many components….and has a long-shelf life,” laughs Tim. There’s nothing “stale” about Tim and the team at Pearl Bakery.

While on your baker VocationVacations® dream job holiday at Pearl Bakery, activities will include some or all of the following:
  • Create and formulate recipes
  • Mix various bread doughs
  • Handle dough including proper dividing and shaping techniques
  • Bake various types of bread loaves and rolls
  • Observe retail bakery/front counter operations
  • Operate essential bakery equipment such as mixers, oven, scales
  • Create croissant dough
  • Bake various pastries
  • Gain awareness of labor, ingredient and overhead costs
  • Gain understanding of differences between retail/wholesale bakery
  • Observe product distribution
  • Bakery ownership 101 with Eric
The baker VocationVacations® dream job holiday with Pearl Bakery includes:
  • Two days of one-on-one mentorship in your dream job as a baker
  • The ability to take the Myers-Briggs Type Indicator® (MBTI®), an online personality assessment designed to identify interests and skill sets
  • The opportunity to participate in a total of one hour of pre- and post-VocationVacation career coaching from an accredited, affiliated VocationVacations career coach

A $100 non-refundable fee is assessed if a VocationVacations experience is cancelled or rescheduled prior to 14-days of the scheduled VocationVacations holiday, based on the approved availability of the mentor to reschedule. A VocationVacation cannot be rescheduled and is non-refundable if cancelled within 14 days of the scheduled VocationVacations holiday. Written notification of cancellation or rescheduling is required in all cases. Grounded Nomads, LLC dba VocationVacations encourages all customers to acquire travel insurance to cover any unforeseen expenses due to cancellation or rescheduling.
