Then get on out to Salem, Oregon and spend two delectable days on a VocationVacation with Debra Edwards and Stephen Perkins at Cascade Baking to learn the ins and outs of owning a bakery!
Stephen spent much of his career as a child psychologist but frequently found himself feeling burnt out, unable to continue the work with the same enthusiasm as he had at the beginning. During these periods of low energy and frustration, Stephen would take a break from this grueling work and return to the kitchen, learning and loving the art of baking. Stephen always went back to work as a child psychologist, however.
But in 2000, Stephen was once again feeling tired of his psychology career. His wife, Debra, felt much the same about her life as a college sociology professor. Together they decided to quit their jobs and open their very own bakery in Salem, Oregon -- and they haven’t looked back!
Cascade Baking Company has achieved true success through its innovative and rather unique use of a radiant-heat oven to bake their bread. The oven was designed by internationally renowned oven designer, Alan Scott. With Alan’s design, and the help of their entire family and friends, Stephen and Debra hand-built a 16 ton brick and mortar radiant-heat oven in the fashion of old-world style brick oven bakeries. The oven is heated once each morning and retains heat so well that it yields between 400 and 500 loaves of bread every day, each made with only the freshest local ingredients and no artificial preservatives.
The combination of Stephen and Debra’s varied career history and their distinctive style of baking makes this two-day VocationVacation an exceptional learning experience!
Your Bakery Owner VocationVacations® dream job holiday activities will include some or all of the following areas as you work with Stephen and Debra:
- Create and formulate recipes
- Mix various bread doughs
- Handle dough, learning proper dividing and shaping techniques
- Work with brick ovenBake various types of bread loaves and rolls
- Create Danish dough
- Create croissant dough
- Make bagels
- Bake various pastries
- Attain exposure to labor and overhead cost information
- Gain understanding of differences between retail and wholesale bakery
- Product distribution
- Assist in retail portion of bakery
- Two days of one-on-one mentorship in your dream job as a Bakery Owner
- The ability to take the Myers-Briggs Type Indicator® (MBTI®), an online personality assessment designed to identify interests and skill sets
- The opportunity to participate in a total of one hour of pre- and post-VocationVacation career coaching from an accredited, affiliated VocationVacations career coach
- A pocket-size VocationVacations journal so you can document your dream job becoming a reality
- Light lunches with your mentor

A $100 non-refundable fee is assessed if a VocationVacations experience is cancelled or rescheduled prior to 14-days of the scheduled VocationVacations holiday, based on the approved availability of the mentor to reschedule. A VocationVacation cannot be rescheduled and is non-refundable if cancelled within 14 days of the scheduled VocationVacations holiday. Written notification of cancellation or rescheduling is required in all cases. Grounded Nomads, LLC dba VocationVacations encourages all customers to acquire travel insurance to cover any unforeseen expenses due to cancellation or rescheduling.
